Mini Meatloaf....

I am on this whole kick of making meals that I can freeze for myself and then grab and go...without a lot of fuss. I bought a big package of hamburger (5 1/2 pounds) and knew I wanted to make some meatloaf with it, but couldn't find just the right recipe....so, I got creative.

First, I made 6 preseasoned burger patties and threw them in the freezer.

This left me with about 4 pounds of ground beef.

other ingredients...

1 cup oatmeal
1 cup hot water
2 pounds ground pork
2 cups ketchup
1/2 cup brown sugar
2 cups precooked rice
seasonsing to suit your taste.


Mix the oatmeal with the water and set aside.

add all other ingredients together and mix well. Add the oatmeal mixture and blend well. Season to suit your tastes.  as far as the seasonings go....use what you use most. I put in some Scampi Blend from Wildtree.

Shape into mini loaves. I have a silicone pan with 8 mini loaf cavities. I was able to fill this twice for 16 single servings. You can add ketchup or BBQ sauce to the top before baking if you like. I did not do this because I planned to freeze individual servings.

Bake at 450 degrees for 40 minutes.


This was seriously the best and moistest meatloaf I have ever made.
